HCM 169 - Culinary Cuisine LabCredits: 4 Lecture Hours: 0 Lab Hours: 8 Practicum Hours: 0 Work Experience: 0 Course Type: Voc/Tech Preparation of intricate and difficult classical cuisine dishes. Students will rotate through the cooking stations of the traditional brigade kitchen and then prepare food for service to the public. A la carte preparation is emphasized. Prerequisite: HCM 167 .
