- Evaluate tools and equipment used in garde manger, emphasizing safety and sanitation procedures.
- Demonstrate how to operate modern garde manger equipment (food processor, blenders, grinders and emulsifiers, buffalo chopper, sausage stuffer, electric chain saw and carving tools).
