BIO 151 - Nutrition Credits: 3 Lecture Hours: 3 Lab Hours: 0 Practicum Hours: 0 Work Experience: 0 Course Type: Open This course is designed to introduce students to the science of nutrition. The course will examine the structure, function, and dietary requirements of individual nutrients; nutrient composition of food; using nutrition and food choices to maintain good health; compare and contrast nutritional needs of different life stages. The student will also be asked to apply knowledge of nutrition to making healthful food choices for the health, well-being and satisfaction of both individuals and selected groups. Competencies

- Describe the Dietary Guidelines for Americans, applying them to a healthful diet
- Identify food groups, number of servings, and serving sizes included in the USDA Food Patterns
- Read a food label, using the Nutrition Facts Panel to determine the nutritional adequacy of a given food
- Describe the Dietary Reference Intake values, applying them to a healthful diet
- Identify the numbers of servings required for each food group, using the new Daily Food Guide and the approximate amounts of foods required to count as a “serving”
- Identify stages and types of nutritional deficiencies
- Identify cases when an estimated safe and adequate intake of a nutrient is used instead of an RDA
- Suggest changes that would improve diets, based upon the nutrient composition of the diets
- Produce basic meal plans as specified by the instructor
- Complete a personal food journal assessment
- Discuss food insecurity, the factors that contribute to food insecurity, and the health consequences related to individuals, families, and communities experiencing food insecurity
- Identify eating disorders, risk factors associated with each, and symptoms of each
- Evaluate the processes of digestion, absorption, transport, and metabolism of nutrients
- Review the parts of the digestive system and the path that food takes
- Identify the components of the cardiovascular and lymphatic systems that relate to absorption and transport of food
- Define digestion and foods that are digested and those that are not
- Identify the processes, the mechanisms and enzymes, and the names used to describe the food as it passes through the digestive system, matching digestive enzymes with their substrates and products
- Assess problems associated with digestion and the consequences of those problems including hormones associated with digestion
- Examine factors required for transport of nutrients, the routes by which they are transported in the blood, and the proportions that each nutrient is usually absorbed
- Distinguish between anabolism, catabolism, and metabolism
- Identify steps in cellular respiration and products of these steps, summarizing how nutrients are metabolized and for what purpose
- Evaluate carbohydrates and carbohydrate metabolism and consumption
- Distinguish complex carbohydrates from simple sugars
- Describe the chemical makeup of monosaccharides and disaccharides including glucose, fructose, galactose, lactose, maltose, and sucrose
- Define oligosaccharide and polysaccharide, describing the roles of starch, glycogen, and fiber in the diet
- Differentiate between soluble and insoluble fiber, including a list of sources
- Identify foods that contribute largely to US consumption of sucrose
- Discuss the process of carbohydrate digestion and absorption, including the roles of the following enzymes: salivary amylase and pancreatic amylase
- Assess the role of the liver in the processing and storage of carbohydrates
- Evaluate any disease processes that may occur when carbohydrate consumption is either too high or too low
- Discuss the prevalence, pathophysiology, and management of Type 1 and Type 2 diabetes mellitus
- Interpret the process of ethanol metabolism and how it relates to nutrition
- Identify the route and site of absorption of ethanol, the approximate percentage absorbed, and factors that include the rate of absorption
- Compare the different alcohol blood levels, determining those that represent intoxication and those that may result in respiratory arrest
- Categorize the metabolic pathways used to get energy out of alcohol and the energy provided
- Assess problems and possible health benefits associated with alcohol consumption
- Justify the structure and function of lipids and how they apply to nutrition

- Summarize the recommended dietary intakes for all types of fat

- Describe the ways in which lipids are used as a fuel source and the storage of lipids
- Evaluate the characteristics of amino acids and proteins and how they relate to nutrition
- Compare and contrast essential from non-essential amino acids by name and description
- Describe how proteins are digested and absorbed by the body
- Identify the roles of protein in the body
- Examine the components of nitrogen balance and factors affecting nitrogen balance
